ABOUT THE FARM

This project was born from the collaboration between the Las Flores and El Diviso farms, located in Pitalito in the Huila region, and the vision of three young coffee enthusiasts: Jhoan Vergara and brothers Néstor and Adrián Lasso. Coming from farming families, these young coffee growers decided to combine their resources and expertise to revolutionize specialty coffee production. Jhoan manages Finca Las Flores—alongside his brother Diego—while Néstor and Adrián own Finca El Diviso. Together, they have created an ecosystem where science and tradition converge to produce unique coffee lots. This partnership has enabled them to experiment with and standardize new processing protocols, consistently enhancing the quality of the final product and positioning El Diviso as a distinguished name on the Colombian coffee scene.

“Estate Natural #2” is the result of a meticulous and innovative processing method: the cherries are hand-picked and carefully selected, discarding any that do not meet quality standards. After an initial flotation in water, the cherries undergo a 48-hour aerobic oxidation phase, allowing a natural maceration that promotes the development of rich aromas. This is followed by a 60-hour anaerobic fermentation in closed tanks at controlled temperatures, which further enriches the coffee’s aromatic complexity. Finally, the process concludes with a brief 12-hour oxidation phase. The beans are then dried in “Casa Elba” for approximately 15 days and stabilized for an additional two weeks, ensuring optimal flavor maturation and long-term preservation of their distinctive characteristics.

In the cup, Estate Natural #2 delights with intense notes of strawberry and green apple, complemented by a hint of lychee that adds depth and sophistication. The coffee’s vibrant sweetness is balanced with medium acidity, creating a complex and harmonious flavor profile. The body is balanced, offering a truly enveloping sensory experience with a long-lasting finish, perfect for those seeking a sweet and complex cup without it becoming overly cloying.
